Ingredients

  • 4 ripe peaches, washed, peeled, and pitted
  • 2 cups heavy cream
  • 1 cup whole milk
  • 3/4 cup sugar
  • 1 tablespoon vanilla extract
  • 1 tablespoon fresh lemon juice

Instructions

  1. Prepare the Peaches: Wash, peel, and pit the peaches, then cut them into small chunks. Optionally, lightly cook them with sugar and lemon juice for 5 minutes to make a peach compote.
  2. Make the Base: In a mixing bowl, whisk together heavy cream, whole milk, sugar, and vanilla extract until the sugar dissolves.
  3. Blend in the Peaches: Add the prepared peaches to the cream mixture and stir gently. Reserve some peach chunks to fold in later if desired.
  4. Chill the Mixture: Cover with plastic wrap and refrigerate for at least 2 hours or overnight.
  5. Churn the Ice Cream: Pour the chilled mixture into an ice cream maker and churn according to instructions for 20-30 minutes.
  6. Fold and Freeze: If you reserved peach chunks, fold them in now. Then transfer the ice cream to a lidded container and freeze for at least 4 hours.
  7. Serve and Enjoy: Scoop into chilled bowls, optionally drizzling with caramel or sprinkling with nuts.

Notes

Using ripe, fresh peaches will yield the best flavor. You can substitute sugar with honey or maple syrup for a different twist.
