- 1 lb boneless chicken (breast or thighs), cut into bite-sized pieces
- 1 cup all-purpose flour (or whole wheat flour)
- 2 large eggs
- 1 cup panko breadcrumbs (or gluten-free breadcrumbs)
- 1/2 cup grated Parmesan cheese (or nutritional yeast)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp paprika
- 1/4 tsp black pepper
- 1 tsp salt
- Oil for frying
Instructions
- Prep the Chicken: Cut the boneless chicken into bite-sized pieces.
- Create your Dredging Station: In one bowl, mix flour with garlic powder, onion powder, paprika, and salt. In another bowl, beat the eggs. In a third bowl, combine panko breadcrumbs and grated Parmesan.
- Coat the Chicken: Dip each piece of chicken in the flour mixture, then in the egg, and finally in the breadcrumb mixture.
- Heat the Oil: In a skillet, heat oil over medium heat until shimmering.
- Cook the Nuggets: Gently place coated chicken nuggets into the skillet, frying for about 4–5 minutes on each side until golden brown.
- Drain and Serve: Remove nuggets and drain on a paper towel-lined plate.
Notes
For a healthier option, air fry the nuggets at 400°F for about 10–12 minutes, flipping halfway for even crispiness.
