Delicious homemade chicken nuggets that are crispy on the outside and juicy on the inside, better than takeout.
Ingredients

- Boneless chicken (breast or thighs)
- 2 eggs
- 1 cup panko breadcrumbs
- 1/2 cup flour
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt to taste
- Pepper to taste
- Herbs of your choice (thyme, parsley, oregano)
Instructions
- Preheat your oven to 400°F (200°C).
- Cut chicken into bite-sized pieces.
- Setup dredging station: mix flour with salt, pepper, and paprika in one bowl; beat eggs in the second bowl; place breadcrumbs in the third bowl.
- Toss chicken pieces in flour, dip in egg, then coat in breadcrumbs.
- Place on a parchment-lined baking sheet.
- Bake for 20-25 minutes, turning halfway through until golden brown.
- For extra crispiness, broil on high for the last 2 minutes.
Notes
For substitutions, you can use turkey or tofu, whole wheat breadcrumbs, or a flaxseed meal with water in place of eggs.
