Delicious homemade chicken nuggets that are crispy on the outside and juicy on the inside, better than takeout.


Ingredients

  • Boneless chicken (breast or thighs)
  • 2 eggs
  • 1 cup panko breadcrumbs
  • 1/2 cup flour
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt to taste
  • Pepper to taste
  • Herbs of your choice (thyme, parsley, oregano)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut chicken into bite-sized pieces.
  3. Setup dredging station: mix flour with salt, pepper, and paprika in one bowl; beat eggs in the second bowl; place breadcrumbs in the third bowl.
  4. Toss chicken pieces in flour, dip in egg, then coat in breadcrumbs.
  5. Place on a parchment-lined baking sheet.
  6. Bake for 20-25 minutes, turning halfway through until golden brown.
  7. For extra crispiness, broil on high for the last 2 minutes.

Notes

For substitutions, you can use turkey or tofu, whole wheat breadcrumbs, or a flaxseed meal with water in place of eggs.
