- 1 package puff pastry, thawed
- 2 cups fresh or frozen cherries, pitted and chopped
- 1/2 cup sugar
- 2 tablespoons cornstarch
- 1 teaspoon vanilla extract
- 1 egg, whisked with 1 tablespoon water (for egg wash)
Instructions
- Prepare the filling by combining cherries, sugar, and cornstarch in a saucepan over medium heat. Cook until bubbly and thickened, about 5-10 minutes. Stir in vanilla and let cool.
- Roll out the puff pastry on a floured surface to about 1/8 inch thick. Cut into 4-inch squares.
- Place a spoonful of filling in the center of each square, fold into triangles, and seal edges with a fork.
- Preheat the oven to 400°F (200°C) and place the turnovers on a baking sheet. Brush tops with egg wash.
- Bake for 15-20 minutes or until golden brown. Cool on a wire rack before serving.
Notes
For a delicious twist, consider adding cinnamon or other fruits like blueberries. Serve warm with powdered sugar or icing.
