Ingredients

  • 2 pounds boneless chicken thighs
  • 1 cup full-fat yogurt
  • 4 tablespoons butter
  • 1 can (14 oz) crushed tomatoes
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 teaspoons garam masala
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup heavy cream
  • Salt to taste
  • Fresh cilantro for garnish

Instructions

  1. Marinate the chicken by combining yogurt, garlic, ginger, turmeric, garam masala, chili powder, and salt. Coat the chicken and let it marinate for at least 30 minutes.
  2. Melt butter in a skillet over medium heat. Sauté onions until golden brown, then add garlic and ginger, cooking until fragrant.
  3. Add crushed tomatoes and simmer for 10 minutes.
  4. Stir in the marinated chicken and cook for 15-20 minutes, until the chicken is cooked through.
  5. Mix in the heavy cream, adjusting seasoning as necessary, and simmer for another 5-10 minutes.
  6. Garnish with cilantro, and serve hot with basmati rice or naan.

Notes

For a dairy-free option, use coconut milk instead of cream. Adjust spice levels to taste.
