- 6 to 8 apples (mix of Granny Smith, Honeycrisp, and Fuji)
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 2 tsp ground cinnamon
- 1/4 tsp nutmeg
- 1/4 tsp allspice (optional)
- 1/4 cup unsalted butter (plus more for dotting)
- 2 1/2 cups all-purpose flour
- 1/2 tsp salt
- 2 tbsp fresh lemon juice
Instructions
- Prepare the Apples: Peel, core, and slice apples uniform at about 1/4 inch thick. Toss with sugars, spices, and lemon juice; let sit for 20 minutes.
- Make the Crust: Mix flour, salt, and sugar; cut in butter until crumbly. Add ice water gradually to form dough. Divide into two discs, wrap, and chill for 1 hour.
- Roll Out the Dough: Roll one disc into a 12-inch circle and place in pie dish.
- Fill the Pie: Spoon the apple mixture into the crust, piling high; dot with butter.
- Top Crust: Roll second disc over the filling, crimp edges to seal, and cut slits for steam. Brush with egg wash and sprinkle with sugar.
- Bake: Preheat oven to 425°F (220°C) and bake for 15 minutes. Reduce temperature to 350°F (175°C) and bake for another 35-45 minutes.
- Cool and Serve: Let the pie cool for at least two hours before serving.
