  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 tsp ground cinnamon
  • 1/4 tsp nutmeg
  • 1/4 tsp allspice (optional)
  • 1/4 cup unsalted butter (plus more for dotting)
  • 2 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 2 tbsp fresh lemon juice

Instructions

  1. Prepare the Apples: Peel, core, and slice apples uniform at about 1/4 inch thick. Toss with sugars, spices, and lemon juice; let sit for 20 minutes.
  2. Make the Crust: Mix flour, salt, and sugar; cut in butter until crumbly. Add ice water gradually to form dough. Divide into two discs, wrap, and chill for 1 hour.
  3. Roll Out the Dough: Roll one disc into a 12-inch circle and place in pie dish.
  4. Fill the Pie: Spoon the apple mixture into the crust, piling high; dot with butter.
  5. Top Crust: Roll second disc over the filling, crimp edges to seal, and cut slits for steam. Brush with egg wash and sprinkle with sugar.
  6. Bake: Preheat oven to 425°F (220°C) and bake for 15 minutes. Reduce temperature to 350°F (175°C) and bake for another 35-45 minutes.
  7. Cool and Serve: Let the pie cool for at least two hours before serving.
