- 1 cup whole roasted almonds
- 1 cup semisweet or dark chocolate chips
- 1 cup powdered sugar (or honey/agave syrup)
- 1/4 cup butter or coconut oil
Instructions
- Prepare your pan by lining an 8-inch square baking dish with parchment paper.
- In a mixing bowl, combine the shredded coconut and powdered sugar, mixing well.
- Melt the butter or coconut oil, then pour it into the coconut mixture and stir until well incorporated.
- Press the coconut mixture evenly into the lined pan.
- Top the coconut layer with almonds, spacing them evenly.
- Melt the chocolate in a microwave-safe bowl, stirring every 30 seconds until smooth.
- Pour the melted chocolate over the coconut and almond layer, smoothing it out evenly.
- Chill in the refrigerator for at least 60 minutes until the chocolate is set.
- Lift the bars out of the pan using the parchment overhang and cut into squares or rectangles.
