Ingredients

  • 1 cup whole roasted almonds
  • 1 cup semisweet or dark chocolate chips
  • 1 cup powdered sugar (or honey/agave syrup)
  • 1/4 cup butter or coconut oil

Instructions

  1. Prepare your pan by lining an 8-inch square baking dish with parchment paper.
  2. In a mixing bowl, combine the shredded coconut and powdered sugar, mixing well.
  3. Melt the butter or coconut oil, then pour it into the coconut mixture and stir until well incorporated.
  4. Press the coconut mixture evenly into the lined pan.
  5. Top the coconut layer with almonds, spacing them evenly.
  6. Melt the chocolate in a microwave-safe bowl, stirring every 30 seconds until smooth.
  7. Pour the melted chocolate over the coconut and almond layer, smoothing it out evenly.
  8. Chill in the refrigerator for at least 60 minutes until the chocolate is set.
  9. Lift the bars out of the pan using the parchment overhang and cut into squares or rectangles.
