Ingredients

  • 1 pound fresh green beans, trimmed
  • 1 cup feta cheese, crumbled
  • 1 cup dried cranberries
  • 1 cup walnuts, toasted
  • 2 tablespoons olive oil
  • 2 tablespoons fresh herbs (parsley or thyme), chopped
  • Salt and pepper to taste

Instructions

  1. Rinse the green beans and trim the ends. Cut them into halves or thirds.
  2. Bring salted water to a boil and blanch the green beans for 2-3 minutes. Shock them in an ice bath.
  3. Toast the walnuts in a skillet over medium heat for 5-7 minutes, tossing frequently.
  4. In a large bowl, combine the blanched green beans, cranberries, and feta. Add the toasted walnuts.
  5. Drizzle with olive oil and season with salt and pepper. Toss gently to combine.
  6. Allow the salad to sit for a few minutes before serving to let flavors meld.

Notes

Can be assembled a day in advance but add dressing just before serving. To enhance flavor, consider adding lemon zest or maple syrup.
