- 1 pound fresh green beans, trimmed
- 1 cup feta cheese, crumbled
- 1 cup dried cranberries
- 1 cup walnuts, toasted
- 2 tablespoons olive oil
- 2 tablespoons fresh herbs (parsley or thyme), chopped
- Salt and pepper to taste
Instructions
- Rinse the green beans and trim the ends. Cut them into halves or thirds.
- Bring salted water to a boil and blanch the green beans for 2-3 minutes. Shock them in an ice bath.
- Toast the walnuts in a skillet over medium heat for 5-7 minutes, tossing frequently.
- In a large bowl, combine the blanched green beans, cranberries, and feta. Add the toasted walnuts.
- Drizzle with olive oil and season with salt and pepper. Toss gently to combine.
- Allow the salad to sit for a few minutes before serving to let flavors meld.
Notes
Can be assembled a day in advance but add dressing just before serving. To enhance flavor, consider adding lemon zest or maple syrup.
