Ingredients

  • 1 skin-on turkey breast
  • 4 cloves fresh garlic, minced
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup olive oil (or melted butter)
  • Salt and pepper, to taste
  • Optional: Zest of 1 lemon

Instructions

  1. Preheat your oven to 375°F (190°C). Pat the turkey breast dry with paper towels and season generously with salt and pepper.
  2. In a mixing bowl, combine minced garlic, chopped herbs, olive oil, and a pinch of salt to make the herb paste.
  3. Loosen the skin of the turkey and spread half of the herb paste under the skin; apply the remaining paste on the outside.
  4. Place the turkey in a roasting pan and roast for about 1.5 hours or until the internal temperature reaches 165°F (74°C), basting every 30 minutes.
  5. Remove the turkey from the oven and let it rest for 15-20 minutes before slicing and serving.

Notes

For added flavor, serve with sautéed mushrooms or cranberry sauce. Consider marinating the turkey overnight with the herb paste for even more flavor.
