Ingredients

- 1 lb Italian or Andouille sausage
- 2 medium sweet potatoes, diced
- 4 cups kale, chopped
- 1 onion, diced
- 4 cloves garlic, minced
- 6 cups chicken or vegetable broth
- 1 tsp dried thyme or rosemary
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Prepare your ingredients: Dice the onion, mince the garlic, and chop the sweet potatoes into bite-sized pieces.
- Sauté the sausage in a large soup pot with olive oil over medium heat until browned, about 5-7 minutes.
- Add the diced onion and minced garlic, stirring until the onions become translucent.
- Add sweet potato cubes along with a pinch of salt and pepper; stir for about 3-4 minutes.
- Pour in the broth and bring to a gentle boil.
- Reduce heat and let the soup simmer for 15-20 minutes, until sweet potatoes are soft.
- Stir in chopped kale and let wilt for about 3-5 minutes.
- Taste and adjust seasoning as needed.
- Ladle soup into bowls, garnish with herbs, and serve warm.
Notes
For added flavor, top with fresh herbs or a squeeze of lemon juice before serving.
