Ingredients

  • 1 cup lentils (brown or green)
  • 2 tablespoons olive oil
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 teaspoon sea salt (to taste)
  • 1/2 teaspoon black pepper (to taste)
  • 1 teaspoon dried thyme (or 1 tablespoon fresh)
  • 1 teaspoon dried rosemary (or 1 tablespoon fresh)
  • 2 cups fresh spinach or diced tomatoes (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery, and sauté until softened, about 5-7 minutes.
  2. Add minced garlic and cook for an additional minute until fragrant.
  3. Pour in the rinsed lentils and add the vegetable broth. Season with salt, pepper, and dried herbs.
  4. Bring to a boil, then reduce to a simmer. Cook for about 25-30 minutes, or until the lentils are tender.
  5. In the last 10 minutes, add any additional vegetables like spinach or diced tomatoes.
  6. Stir in freshly chopped herbs just before serving. Adjust seasoning as needed.
  7. Ladle into bowls, drizzle with olive oil, and serve with crusty bread if desired.

Notes

This recipe can be easily scaled up. It’s even better the next day. Consider adding a splash of lemon juice before serving for a burst of flavor.
