Description
A fulfilling lentil soup that brings comfort and health together, infused with garlic and fresh herbs.
Ingredients

- 1 cup lentils (brown or green)
- 2 tablespoons olive oil
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon sea salt (to taste)
- 1/2 teaspoon black pepper (to taste)
- 1 teaspoon dried thyme (or 1 tablespoon fresh)
- 1 teaspoon dried rosemary (or 1 tablespoon fresh)
- 2 cups fresh spinach or diced tomatoes (optional)
Instructions
- In a large pot, heat olive oil over medium heat. Add onions, carrots, and celery, and sauté until softened, about 5-7 minutes.
- Add minced garlic and cook for an additional minute until fragrant.
- Pour in the rinsed lentils and add the vegetable broth. Season with salt, pepper, and dried herbs.
- Bring to a boil, then reduce to a simmer. Cook for about 25-30 minutes, or until the lentils are tender.
- In the last 10 minutes, add any additional vegetables like spinach or diced tomatoes.
- Stir in freshly chopped herbs just before serving. Adjust seasoning as needed.
- Ladle into bowls, drizzle with olive oil, and serve with crusty bread if desired.
Notes
This recipe can be easily scaled up. It’s even better the next day. Consider adding a splash of lemon juice before serving for a burst of flavor.
