Instructions
- Brown the Beef: In a skillet, heat over medium heat, add ground beef, onions, and garlic, and sauté until browned and onions are translucent.
- Prep the Potatoes: Chop the Yukon Gold potatoes into bite-sized cubes; no need to peel.
- Combine in the Crockpot: Transfer the meat mixture to the crockpot, add potatoes, beef broth, thyme, salt, and pepper, and stir well.
- Let It Simmer: Cook on low for 6-8 hours or high for 3-4 hours.
- Add Creaminess: About 30 minutes before serving, stir in heavy cream or half-and-half.
- Taste and Adjust: Taste the soup and adjust seasoning as needed.
