Ingredients

- 1.5 lbs boneless, skinless chicken breasts or thighs
- 4 cups chicken broth (or vegetable broth for a lighter option)
- 1 cup chopped bell peppers (red, green, or yellow)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 tsp cumin
- 1 tsp chili powder
- 1 tsp oregano
- 1 lime, juiced
- Tortilla chips (for topping)
- Optional toppings: shredded cheese, diced avocado, fresh cilantro
Instructions
- Place the chicken at the bottom of the crockpot.
- Sprinkle chopped onions and minced garlic over the chicken.
- Add the bell peppers and any other desired vegetables.
- Pour in the canned tomatoes and chicken broth, then add the spices. Stir gently to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Shred the chicken right in the pot and mix well.
- Add lime juice before serving.
- Serve with crispy tortilla strips, cheese, avocado, and cilantro.
Notes
For added flavor, consider searing the chicken first or sautéing the onions and garlic.
