  • 4 cups chicken broth (or vegetable broth for a lighter option)
  • 1 cup chopped bell peppers (red, green, or yellow)
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp oregano
  • 1 lime, juiced
  • Tortilla chips (for topping)
  • Optional toppings: shredded cheese, diced avocado, fresh cilantro

Instructions

  1. Place the chicken at the bottom of the crockpot.
  2. Sprinkle chopped onions and minced garlic over the chicken.
  3. Add the bell peppers and any other desired vegetables.
  4. Pour in the canned tomatoes and chicken broth, then add the spices. Stir gently to combine.
  5. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  6. Shred the chicken right in the pot and mix well.
  7. Add lime juice before serving.
  8. Serve with crispy tortilla strips, cheese, avocado, and cilantro.
