Ingredients

  • 1 packet gravy mix
  • 2 cups low-sodium beef broth
  • 1 sweet yellow onion, chopped
  • 4 cloves garlic, chopped
  • 8 ounces cremini or button mushrooms, sliced
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 2 bay leaves (optional)
  • Salt and pepper to taste

Instructions

  1. Heat a skillet over medium-high heat with a splash of oil. Season beef tips with salt and pepper, and sear until browned on all sides.
  2. Add chopped onions and garlic to the skillet and sauté until onions are soft and translucent.
  3. Transfer the beef tips, sautéed onions, garlic, gravy mix, beef broth, mushrooms, and vegetables to a crockpot.
  4. Season with bay leaves or herbs if desired.
  5. Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
  6. Remove bay leaves and stir before serving, thickening the gravy if necessary. Serve over mashed potatoes, rice, or in a bread bowl.

Notes

For a lighter option, you can substitute beef with chicken thighs or use any vegetables you have on hand. Make sure to taste and adjust seasoning before serving.
