- 2 pounds beef tips (chuck or sirloin)
- 1 packet gravy mix
- 2 cups low-sodium beef broth
- 1 sweet yellow onion, chopped
- 4 cloves garlic, chopped
- 8 ounces cremini or button mushrooms, sliced
- 2 carrots, chopped
- 2 celery stalks, chopped
- 2 bay leaves (optional)
- Salt and pepper to taste
Instructions
- Heat a skillet over medium-high heat with a splash of oil. Season beef tips with salt and pepper, and sear until browned on all sides.
- Add chopped onions and garlic to the skillet and sauté until onions are soft and translucent.
- Transfer the beef tips, sautéed onions, garlic, gravy mix, beef broth, mushrooms, and vegetables to a crockpot.
- Season with bay leaves or herbs if desired.
- Cover and cook on low for 6-8 hours or high for 3-4 hours until beef is tender.
- Remove bay leaves and stir before serving, thickening the gravy if necessary. Serve over mashed potatoes, rice, or in a bread bowl.
Notes
For a lighter option, you can substitute beef with chicken thighs or use any vegetables you have on hand. Make sure to taste and adjust seasoning before serving.
