  • 2 tbsp soy sauce or Worcestershire sauce
  • 2 tsp fresh thyme or 2 bay leaves
  • 2 tbsp flour or cornstarch (to thicken)
  • Salt and pepper to taste
  • 1 tbsp oil (for searing)

Instructions

  1. Prep your ingredients by cutting beef into bite-sized chunks and slicing mushrooms and onions.
  2. In a skillet over medium-high heat, sear the beef in batches until browned, then set aside.
  3. Layer the seared beef in the crockpot along with sautéed mushrooms, onions, and minced garlic.
  4. In a separate bowl, whisk together beef broth, soy sauce, and flour or cornstarch, then pour over the beef and vegetables.
  5. Add herbs and seasonings, cover, and cook on low for 6-8 hours or high for 3-4 hours.
  6. Once cooked, stir and check the gravy’s consistency; let it thicken if needed. Serve over mashed potatoes, noodles, or rice, garnished with fresh parsley.

Notes

For a vegetarian option, substitute beef with chicken or plant-based protein. You can also use whatever mushrooms you have on hand.
