- 2 lbs beef tips (sirloin or chuck roast)
- 8 oz cremini or button mushrooms, sliced
- 1 large sweet yellow onion, sliced
- 3 cloves garlic, minced
- 2 cups beef broth
- 2 tbsp soy sauce or Worcestershire sauce
- 2 tsp fresh thyme or 2 bay leaves
- 2 tbsp flour or cornstarch (to thicken)
- Salt and pepper to taste
- 1 tbsp oil (for searing)
Instructions
- Prep your ingredients by cutting beef into bite-sized chunks and slicing mushrooms and onions.
- In a skillet over medium-high heat, sear the beef in batches until browned, then set aside.
- Layer the seared beef in the crockpot along with sautéed mushrooms, onions, and minced garlic.
- In a separate bowl, whisk together beef broth, soy sauce, and flour or cornstarch, then pour over the beef and vegetables.
- Add herbs and seasonings, cover, and cook on low for 6-8 hours or high for 3-4 hours.
- Once cooked, stir and check the gravy’s consistency; let it thicken if needed. Serve over mashed potatoes, noodles, or rice, garnished with fresh parsley.
Notes
For a vegetarian option, substitute beef with chicken or plant-based protein. You can also use whatever mushrooms you have on hand.
