- 1 lb ground beef or Italian sausage
- 8 oz lasagna noodles
- 1 can (15 oz) tomato sauce
- 1 can (15 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 1 onion, diced
- 4 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1/2 tsp red pepper flakes
- Salt and pepper to taste
- 1 cup ricotta cheese
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
- Vegetables (optional): bell peppers, zucchini, carrots, or spinach
Instructions
- In a large pot, heat a drizzle of olive oil over medium heat. Add diced onion and minced garlic. Sauté until soft and translucent, about 3-4 minutes.
- Stir in the ground beef or sausage, breaking it into smaller pieces while cooking until browned. Drain off excess fat as needed.
- Pour in the tomato sauce, crushed tomatoes, and broth. Stir to combine and allow to simmer for about 10 minutes.
- Stir in dried herbs, red pepper flakes, and a pinch of salt and pepper. Let simmer for another 5 minutes.
- Reduce heat and mix in lasagna noodles. Cook until tender, typically 8-10 minutes.
- Remove pot from heat, and stir in ricotta and mozzarella cheese until melted and creamy.
- Ladle the soup into bowls and garnish with fresh basil or more cheese if desired. Serve warm with crusty bread.
Notes
Feel free to customize with leftover meats and vegetables for added texture and nutrition. Avoid overcooking the noodles.
