A comforting and flavorful Italian-inspired lasagna soup loaded with ground beef, mushrooms, cheese, and savory herbs.

- 1 lb Ground Beef or Italian Sausage
- 8 oz Cremini or Button Mushrooms, sliced
- 1 Onion, chopped
- 3–4 cloves Garlic, minced
- 1 can (28 oz) Crushed Tomatoes
- 4 cups Vegetable or Chicken Broth
- 8 oz Lasagna Noodles, broken into pieces
- 1 cup Ricotta Cheese
- 1 cup Mozzarella Cheese, shredded
- 1/2 cup Parmesan Cheese, grated
- 1 tsp Dried Oregano
- 1 tsp Fresh Thyme
- Salt and Pepper to taste
- Olive Oil for sautéing
- Fresh Basil for garnish
Instructions
- In a large pot or Dutch oven, heat olive oil over medium heat and sauté chopped onions and minced garlic for 3-5 minutes.
- Add ground meat to the pot, cook until browned.
- Incorporate sliced mushrooms and cook for about 5-7 minutes until they brown.
- Add crushed tomatoes and broth, stirring to combine. Scrape any brown bits from the bottom of the pot.
- Season with oregano, thyme, salt, and pepper; let simmer for 15-20 minutes.
- Add broken lasagna noodles and cook until al dente, about 8-10 minutes.
- Off heat, stir in ricotta and mozzarella cheese until melted.
- Serve hot, garnished with fresh basil and Parmesan cheese.
Notes
For a vegetarian version, substitute ground meat with chickpeas and use plant-based cheese.
