A comforting and flavorful Italian-inspired lasagna soup loaded with ground beef, mushrooms, cheese, and savory herbs.


Ingredients

  • 1 lb Ground Beef or Italian Sausage
  • 8 oz Cremini or Button Mushrooms, sliced
  • 1 Onion, chopped
  • 34 cloves Garlic, minced
  • 1 can (28 oz) Crushed Tomatoes
  • 4 cups Vegetable or Chicken Broth
  • 8 oz Lasagna Noodles, broken into pieces
  • 1 cup Ricotta Cheese
  • 1 cup Mozzarella Cheese, shredded
  • 1/2 cup Parmesan Cheese, grated
  • 1 tsp Dried Oregano
  • 1 tsp Fresh Thyme
  • Salt and Pepper to taste
  • Olive Oil for sautéing
  • Fresh Basil for garnish

Instructions

  1. In a large pot or Dutch oven, heat olive oil over medium heat and sauté chopped onions and minced garlic for 3-5 minutes.
  2. Add ground meat to the pot, cook until browned.
  3. Incorporate sliced mushrooms and cook for about 5-7 minutes until they brown.
  4. Add crushed tomatoes and broth, stirring to combine. Scrape any brown bits from the bottom of the pot.
  5. Season with oregano, thyme, salt, and pepper; let simmer for 15-20 minutes.
  6. Add broken lasagna noodles and cook until al dente, about 8-10 minutes.
  7. Off heat, stir in ricotta and mozzarella cheese until melted.
  8. Serve hot, garnished with fresh basil and Parmesan cheese.

Notes

For a vegetarian version, substitute ground meat with chickpeas and use plant-based cheese.
