- 2 lbs Chuck roast or brisket, cut into bite-sized pieces
- 3 cups Beef broth
- 2 cups Egg noodles (or substitute with whole wheat or gluten-free noodles)
- 1 large Onion, chopped
- 2 Carrots, chopped
- 2 Stalks Celery, chopped
- 2 cloves Garlic, minced
- 1 tsp Fresh thyme
- 1/2 tsp Bay leaves
- Salt and pepper, to taste
- 2 tbsp Oil for searing
- Fresh parsley, for garnish
Instructions
- Sear the Beef: Start by cutting the chuck roast into bite-sized pieces. In a large pot or Dutch oven, heat oil over medium-high heat. Sear the beef pieces until they are browned on all sides.
- Add the Aromatics: Once the beef is browned, remove it from the pot. In the same pot, add chopped onions, garlic, carrots, and celery. Sauté until the veggies are soft and fragrant, about 5-7 minutes.
- Simmer with Broth: Place the seared beef back into the pot. Pour in the beef broth, ensuring all ingredients are covered. Add thyme, bay leaves, salt, and pepper. Bring to a gentle boil, then reduce the heat. Simmer for 90-120 minutes, or until the beef is tender.
- Cook the Noodles: Near the end of the simmering time, prepare your noodles according to the package instructions. Drain and set aside.
- Combine and Serve: Once the beef is tender, add in the cooked noodles and stir gently. Let everything cozy up for about 5-10 minutes on low heat.
- Garnish: Just before serving, sprinkle fresh parsley over the top for a burst of color and flavor.
- Enjoy: Ladle generous portions into bowls and dig in while it’s still warm!
Notes
For a vegetarian version, use sautéed mushrooms and vegetable broth. Allow the dish to rest for a few minutes before serving to enhance flavors.
