- 1 lb ground turkey
- 1 cup bell peppers, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tbsp chili powder
- 1 can (14.5 oz) canned tomatoes, diced or crushed
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn (fresh or frozen)
- Toppings: avocado, shredded cheese, or Greek yogurt
Instructions
- Preheat your oven to 375°F (190°C). Grease a muffin tin with cooking spray or a light coat of oil.
- In a large skillet over medium heat, sauté chopped onions and garlic until fragrant and softened, about 3-4 minutes.
- Add the ground turkey to the skillet, breaking it apart as it cooks. Season with chili powder, salt, and pepper. Cook until browned, about 5-7 minutes.
- Stir in the chopped bell peppers, canned tomatoes, black beans, and corn. Simmer for about 5 minutes until heated through.
- Taste and adjust seasonings as necessary.
- Spoon the mixture into muffin tin, filling each cup to the top.
- Bake for 25-30 minutes, until the tops are golden and firm.
- Let cool for a few minutes before removing from the tin. Serve warm with your choice of toppings.
