- 2 tablespoons fresh ginger, grated
- 4 cloves garlic, minced
- 4 cups chicken or vegetable broth
- 8 ounces rice noodles
- 1 cup shiitake or cremini mushrooms, sliced
- 1 cup baby spinach or bok choy
- 2 tablespoons soy sauce or tamari
- 1 tablespoon lime juice
- Fresh cilantro or basil for garnish
Instructions
- Prepare the broth base. In a large pot, add a splash of oil and sauté the minced garlic and freshly grated ginger over medium heat.
- Add broth. Pour in your chicken or vegetable broth and bring it to a gentle simmer.
- Introduce the mushrooms and veggies. Add in the sliced mushrooms and any vegetables you’re using. Let them simmer for 5-7 minutes until they soften.
- Cook the rice noodles. In a separate pot, cook your rice noodles according to package instructions. Once cooked, drain them and set aside.
- Flavor enhancement. Stir in soy sauce or tamari and a splash of lime juice to brighten all those beautiful flavors.
- Assemble your bowl. In a serving bowl, layer your cooked rice noodles, then ladle the warm ginger garlic broth over. Top with the fresh herbs and extra lime juice.
- Serve with love. Encourage your loved ones to enjoy a bowl together and share stories.
Notes
For vegan options, substitute chicken broth with vegetable broth and use tofu instead of chicken.
