Ingredients

  • 2 tablespoons fresh ginger, grated
  • 4 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • 8 ounces rice noodles
  • 1 cup shiitake or cremini mushrooms, sliced
  • 1 cup baby spinach or bok choy
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon lime juice
  • Fresh cilantro or basil for garnish

Instructions

  1. Prepare the broth base. In a large pot, add a splash of oil and sauté the minced garlic and freshly grated ginger over medium heat.
  2. Add broth. Pour in your chicken or vegetable broth and bring it to a gentle simmer.
  3. Introduce the mushrooms and veggies. Add in the sliced mushrooms and any vegetables you’re using. Let them simmer for 5-7 minutes until they soften.
  4. Cook the rice noodles. In a separate pot, cook your rice noodles according to package instructions. Once cooked, drain them and set aside.
  5. Flavor enhancement. Stir in soy sauce or tamari and a splash of lime juice to brighten all those beautiful flavors.
  6. Assemble your bowl. In a serving bowl, layer your cooked rice noodles, then ladle the warm ginger garlic broth over. Top with the fresh herbs and extra lime juice.
  7. Serve with love. Encourage your loved ones to enjoy a bowl together and share stories.

Notes

For vegan options, substitute chicken broth with vegetable broth and use tofu instead of chicken.
