Ingredients

- 8 oz high-quality dark chocolate (at least 70% cocoa)
- 1 cup heavy cream
- ¾ cup toasted hazelnuts (finely chopped)
- 1 tbsp butter (room temperature)
- Cocoa powder or chopped nuts for rolling
Instructions
- Chop the chocolate and place it in a heatproof bowl.
- Heat the cream in a small saucepan until it simmers, then remove from heat.
- Pour the hot cream over the chopped chocolate and let it sit for a minute, then stir until smooth.
- Add the butter to the ganache and stir until melted.
- Fold in the chopped hazelnuts.
- Cover the bowl with plastic wrap and refrigerate the ganache for about 2 hours until firm.
- Scoop out small portions and roll them into balls.
- Roll each truffle in cocoa powder or chopped nuts.
- Chill in the fridge for another 30 minutes before serving.

Use high-quality chocolate for the best flavor. Ensure to chill the ganache adequately for rolling.
