Description

Ingredients

Scale
  • 8 oz high-quality dark chocolate (at least 70% cocoa)
  • 1 cup heavy cream
  • ¾ cup toasted hazelnuts (finely chopped)
  • 1 tbsp butter (room temperature)
  • Cocoa powder or chopped nuts for rolling

Instructions

  1. Chop the chocolate and place it in a heatproof bowl.
  2. Heat the cream in a small saucepan until it simmers, then remove from heat.
  3. Pour the hot cream over the chopped chocolate and let it sit for a minute, then stir until smooth.
  4. Add the butter to the ganache and stir until melted.
  5. Fold in the chopped hazelnuts.
  6. Cover the bowl with plastic wrap and refrigerate the ganache for about 2 hours until firm.
  7. Scoop out small portions and roll them into balls.
  8. Roll each truffle in cocoa powder or chopped nuts.
  9. Chill in the fridge for another 30 minutes before serving.
