- 1 cup hazelnuts, toasted and roughly chopped
- 2 cups all-purpose flour
- 1 cup unsalted butter, softened
- 3/4 cup brown sugar
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup dark chocolate chips
- 1 teaspoon baking soda
- 1/2 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C). Spread hazelnuts on a baking sheet and toast for 10–12 minutes until lightly browned. Let cool and chop.
- In a bowl, whisk together flour, baking soda, and salt. Set aside.
- In a large bowl, beat together softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
- Incorporate the egg and vanilla extract, mixing until well combined.
- Gradually add the dry ingredients into the wet mixture, mixing just until combined.
- Gently fold in the chopped hazelnuts and dark chocolate chips until evenly distributed.
- Using a cookie scoop or spoon, drop rounded tablespoons of dough onto parchment-lined baking sheets.
- Bake for 10–12 minutes, until lightly golden on the edges but still soft in the center.
- Let cookies cool on the baking sheet for 5 minutes before transferring to wire racks.
Notes
For a gluten-free version, use almond flour. You can also substitute chopped walnuts or milk chocolate chips for variation.
