Instructions

  1. Preheat your oven to 350°F (175°C). Spread hazelnuts on a baking sheet and toast for 10–12 minutes until lightly browned. Let cool and chop.
  2. In a bowl, whisk together flour, baking soda, and salt. Set aside.
  3. In a large bowl, beat together softened butter, brown sugar, and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Incorporate the egg and vanilla extract, mixing until well combined.
  5. Gradually add the dry ingredients into the wet mixture, mixing just until combined.
  6. Gently fold in the chopped hazelnuts and dark chocolate chips until evenly distributed.
  7. Using a cookie scoop or spoon, drop rounded tablespoons of dough onto parchment-lined baking sheets.
  8. Bake for 10–12 minutes, until lightly golden on the edges but still soft in the center.
  9. Let cookies cool on the baking sheet for 5 minutes before transferring to wire racks.

Notes

For a gluten-free version, use almond flour. You can also substitute chopped walnuts or milk chocolate chips for variation.
