- 1 ¾ cups all-purpose flour
- 1 cup granulated sugar
- ¾ cup cocoa powder
- 2 large eggs
- 1 cup buttermilk
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1 cup fresh raspberries or strawberries
- 1 cup heavy whipping cream
- Red food coloring
Instructions
- Preheat your oven to 350°F (175°C) and line your cupcake pan with festive liners.
- In a mixing bowl, combine the flour, sugar, cocoa powder, baking soda, and baking powder.
- In another bowl, whisk together the eggs, buttermilk, and vanilla extract.
- Gradually mix the wet ingredients into the dry ingredients until just combined.
- Fill your cupcake liners two-thirds full and bake for 18-20 minutes, until risen.
- While cooling, mash the raspberries with a touch of sugar and create a hole in each cupcake to pipe in the filling.
- Whip the heavy cream until stiff peaks form, then pipe or dollop on top of each cupcake.
- Drizzle with red food coloring for the finishing touch.
Notes
For a less sweet frosting, substitute with cream cheese instead of whipped cream. Cupcakes can be stored in an airtight container for up to 3 days at room temperature.
