Description

Delightfully spooky cupcakes filled with raspberry or strawberry ‘blood’ and topped with ghostly whipped cream, perfect for Halloween celebrations.


Ingredients

  • 1 ¾ cups all-purpose flour
  • 1 cup granulated sugar
  • ¾ cup cocoa powder
  • 2 large eggs
  • 1 cup buttermilk
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1 cup fresh raspberries or strawberries
  • 1 cup heavy whipping cream
  • Red food coloring

Instructions

  1. Preheat your oven to 350°F (175°C) and line your cupcake pan with festive liners.
  2. In a mixing bowl, combine the flour, sugar, cocoa powder, baking soda, and baking powder.
  3. In another bowl, whisk together the eggs, buttermilk, and vanilla extract.
  4. Gradually mix the wet ingredients into the dry ingredients until just combined.
  5. Fill your cupcake liners two-thirds full and bake for 18-20 minutes, until risen.
  6. While cooling, mash the raspberries with a touch of sugar and create a hole in each cupcake to pipe in the filling.
  7. Whip the heavy cream until stiff peaks form, then pipe or dollop on top of each cupcake.
  8. Drizzle with red food coloring for the finishing touch.

Notes

For a less sweet frosting, substitute with cream cheese instead of whipped cream. Cupcakes can be stored in an airtight container for up to 3 days at room temperature.
