  • 1 cup pumpkin puree
  • 1 cup warm milk
  • 2 large eggs
  • 1/4 teaspoon salt
  • 1 cup brown sugar
  • 1/2 cup softened butter (for filling)
  • 1 cup cream cheese (for frosting)
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Milk (as needed for frosting)

Instructions

  1. Prepare the dough: In a large bowl, combine warm milk, sugar, and yeast. Let it sit for about 5 minutes until frothy.
  2. Mix and knead: Add melted butter, pumpkin puree, eggs, and salt. Gradually stir in the flour until the dough comes together. Knead for 5-7 minutes until smooth.
  3. First rise: Place the dough in a greased bowl, cover it, and let it rise for about 60 minutes until doubled.
  4. Prepare the filling: Mix brown sugar, cinnamon, nutmeg, and softened butter in a bowl.
  5. Roll out the dough: After rising, punch it down and roll it out into a rectangle about 1/4 inch thick.
  6. Spread the filling: Spread the filling over the dough, leaving a small border around the edges.
  7. Roll and cut: Roll the dough tightly into a log and slice into 12 rolls.
  8. Second rise: Place rolls in a greased baking dish, cover, and let them rise for another 30-40 minutes.
  9. Bake: Preheat oven to 350°F (175°C) and bake for 25-30 minutes until golden brown.
  10. Make the frosting: Mix cream cheese, powdered sugar, melted butter, vanilla extract, and milk until smooth.
  11. Frost and enjoy: Drizzle the frosting over the warm rolls and enjoy!

Notes

For a vegan version, substitute coconut oil for butter and use plant-based milk.
