- 1 lb halibut fillets, cut into bite-sized pieces
- 1 cup tempura batter mix or all-purpose flour and cornstarch blend
- 1 cup ice-cold water
- Pinch of salt
- Vegetable oil for frying
Instructions
- Cut halibut fillets into bite-sized pieces and pat them dry with paper towels.
- In a bowl, whisk together tempura mix and ice-cold water until just combined; leave lumps for a crispy texture.
- Heat oil in a heavy-bottomed skillet or deep fryer to 350°F (175°C).
- Dip halibut pieces in batter, letting excess drip off, and fry in batches until golden brown, about 3–4 minutes on each side.
- Remove with a slotted spoon and drain on paper towels.
- Serve with lemon wedges and a bowl of soy sauce or ponzu for dipping.
