- 2 pounds beef (Chuck or Brisket)
- 1 can Guinness stout
- 2 onions, diced
- 4 cloves garlic, minced
- 4 carrots, chopped
- 4 potatoes, diced
- 3 cups beef broth
- 2 sprigs fresh thyme
- Salt and pepper to taste
- 2 tablespoons olive oil or butter
Instructions
- In a sturdy Dutch oven, heat olive oil or butter over medium-high heat. Season beef cubes with salt and pepper and sear each side until browned, about 3-4 minutes. Remove and set aside.
- Add diced onions and minced garlic to the pot, sautéing until translucent and fragrant, about 4-5 minutes.
- Deglaze the pot with the can of Guinness, scraping up the browned bits from the bottom.
- Return the beef to the pot along with chopped carrots, potatoes, beef broth, and fresh herbs. Stir well.
- Bring to a gentle simmer, cover partially, and reduce heat to low. Cook for 1.5 to 2 hours.
- Adjust seasonings as needed before serving.
- Garnish with fresh herbs and serve with crusty bread or over mashed potatoes.
Notes
Allow the stew to rest for 15 minutes after cooking for the best flavor. Leftovers can be stored in the fridge for 3-4 days or frozen for up to 3 months.
