  • 2 lbs Beef (Chuck Roast or Brisket)
  • 1 cup Guinness Stout
  • 2 Onions, chopped
  • 4 Garlic cloves, minced
  • 3 Carrots, chopped
  • 2 Potatoes (Yukon gold), diced
  • 2 stalks Celery, chopped
  • 4 cups Beef or Vegetable Broth
  • 1 tsp Fresh Thyme
  • 2 Bay Leaves
  • Salt and Pepper to taste
  • 1 tbsp Olive Oil

Instructions

  1. Brown the Beef: Cut the beef into bite-sized pieces, pat dry, and sear in a heavy pot over medium-high heat until browned on all sides.
  2. Sauté Aromatics: Remove beef, lower heat, and cook onions until golden, add garlic and sauté until fragrant.
  3. Deglaze the Pot: Pour in Guinness, scraping the bottom of the pot.
  4. Combine and Simmer: Return beef with carrots, celery, potatoes, broth, thyme, and bay leaves. Season with salt and pepper.
  5. Slow Cooking: Bring to a gentle boil, reduce heat, cover, and simmer for 120-180 minutes.
  6. Final Seasoning: Taste and adjust seasoning before serving warm with optional parsley garnish.
