- 2 lbs Beef (Chuck Roast or Brisket)
- 1 cup Guinness Stout
- 2 Onions, chopped
- 4 Garlic cloves, minced
- 3 Carrots, chopped
- 2 Potatoes (Yukon gold), diced
- 2 stalks Celery, chopped
- 4 cups Beef or Vegetable Broth
- 1 tsp Fresh Thyme
- 2 Bay Leaves
- Salt and Pepper to taste
- 1 tbsp Olive Oil
Instructions
- Brown the Beef: Cut the beef into bite-sized pieces, pat dry, and sear in a heavy pot over medium-high heat until browned on all sides.
- Sauté Aromatics: Remove beef, lower heat, and cook onions until golden, add garlic and sauté until fragrant.
- Deglaze the Pot: Pour in Guinness, scraping the bottom of the pot.
- Combine and Simmer: Return beef with carrots, celery, potatoes, broth, thyme, and bay leaves. Season with salt and pepper.
- Slow Cooking: Bring to a gentle boil, reduce heat, cover, and simmer for 120-180 minutes.
- Final Seasoning: Taste and adjust seasoning before serving warm with optional parsley garnish.
