Description
A hearty and flavorful stew made with tender beef, root vegetables, and the rich taste of Guinness beer.
Ingredients

- 2 lbs beef chuck roast, cut into bite-sized cubes
- 1 can (14.9 oz) Guinness beer
- 2 onions, chopped
- 4 cloves garlic, minced
- 8 oz button or cremini mushrooms, sliced
- 4 carrots, chopped
- 4 potatoes, diced
- 4 cups beef broth
- 2 sprigs fresh thyme
- 2 bay leaves
- 2 tbsp olive oil
- 2 tbsp butter
- Salt and pepper to taste
Instructions
- Heat olive oil and butter in a large pot over medium-high heat. Sear the seasoned beef cubes until browned on all sides (about 3-4 minutes) and then set aside.
- Add onions, garlic, and mushrooms to the pot. Sauté until the onions are translucent (about 5 minutes).
- Deglaze the pot with Guinness beer, scraping up browned bits from the bottom. Let it simmer for two minutes.
- Return the beef to the pot. Add carrots, potatoes, and enough beef broth to cover. Stir in thyme and bay leaves.
- Bring to a gentle boil, then reduce heat to low. Cover and simmer for at least 1 hour, or until beef is tender.
- Adjust seasoning with salt and pepper before serving. Serve hot with crusty bread or over mashed potatoes.
Notes
For added richness, you can splash more Guinness into the stew before serving. Feel free to customize vegetables based on what’s available in your fridge.
