A delightful family recipe featuring ground turkey, rice, and herbs stuffed in colorful bell peppers, baked to perfection.


Ingredients

  • 1 lb ground turkey
  • 4 bell peppers (any color)
  • 1 cup cooked rice or quinoa
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 cup crushed tomatoes or tomato sauce
  • 1 cup shredded cheddar or mozzarella cheese
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Slice the tops off the bell peppers and remove the seeds and membranes.
  3. In a skillet, heat olive oil over medium heat. Sauté the diced onion and minced garlic for about 3 minutes.
  4. Add the ground turkey to the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes.
  5. Mix in the cooked rice, crushed tomatoes, and spices. Allow to cool slightly before adding cheese.
  6. Stuff each pepper with the turkey mixture.
  7. Top with cheese and place the peppers upright in a baking dish with a little water at the bottom.
  8. Bake for 30-35 minutes until peppers are tender and the cheese is bubbly and golden.
  9. Serve warm, garnished with fresh herbs if desired.

Notes

For a vegetarian version, substitute ground turkey with lentils or chickpeas. You can also skip the rice for a low-carb option.
