A delightful family recipe featuring ground turkey, rice, and herbs stuffed in colorful bell peppers, baked to perfection.

- 1 lb ground turkey
- 4 bell peppers (any color)
- 1 cup cooked rice or quinoa
- 1 onion, diced
- 2 cloves garlic, minced
- 1 cup crushed tomatoes or tomato sauce
- 1 cup shredded cheddar or mozzarella cheese
- 1 tsp dried oregano
- 1 tsp dried basil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the tops off the bell peppers and remove the seeds and membranes.
- In a skillet, heat olive oil over medium heat. Sauté the diced onion and minced garlic for about 3 minutes.
- Add the ground turkey to the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes.
- Mix in the cooked rice, crushed tomatoes, and spices. Allow to cool slightly before adding cheese.
- Stuff each pepper with the turkey mixture.
- Top with cheese and place the peppers upright in a baking dish with a little water at the bottom.
- Bake for 30-35 minutes until peppers are tender and the cheese is bubbly and golden.
- Serve warm, garnished with fresh herbs if desired.
Notes
For a vegetarian version, substitute ground turkey with lentils or chickpeas. You can also skip the rice for a low-carb option.
