Description

A comforting and versatile dish that combines seasoned ground beef with colorful vegetables and fluffy rice, ideal for family gatherings and quick weeknight meals.

Ingredients

Scale
  • 1 lb ground beef (80/20 lean)
  • 3 cups day-old rice
  • 1 cup mixed vegetables (bell peppers, peas, carrots)
  • 2 tablespoons soy sauce
  • 2 cloves garlic, minced
  • 1 inch ginger, minced
  • 1 tablespoon sesame oil
  • 2 eggs
  • Salt and pepper to taste

Instructions

  1. Chop the vegetables finely for even cooking.
  2. Heat a pan over medium-high and add oil. Cook the ground beef until browned (5-7 minutes) and season with salt and pepper.
  3. Add garlic and ginger, cooking for another minute until fragrant.
  4. Incorporate vegetables and cook until tender (3-4 minutes).
  5. Fold in the rice, breaking apart clumps, and drizzle with soy sauce.
  6. Make space for eggs, scramble them in the pan, and mix them into the rice.
  7. Finish with sesame oil and garnish with sliced green onions before serving.

Notes

Use high heat for quick cooking and avoid overcrowding the pan. Day-old rice is crucial for the right texture.
