Description

Ingredients

  • 2 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • Green food coloring or fresh mint
  • Sprinkles for topping

Instructions

  1. Preheat the oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually blend the dry ingredients into the wet ingredients until just combined.
  5. Add green food coloring to achieve desired shade and fold in half the sprinkles.
  6. Spread the dough evenly in the prepared pan and sprinkle with the remaining sprinkles.
  7. Bake for 20-25 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool completely in the pan, then lift out and cut into squares.

Notes

For a dairy-free version, use coconut oil instead of butter. For gluten-free, try using almond flour.
