- 2 ½ cups all-purpose flour
- 1 cup granulated sugar
- 1 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- Green food coloring or fresh mint
- Sprinkles for topping
Instructions
- Preheat the oven to 350°F (175°C) and line a 9×13 inch baking pan with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually blend the dry ingredients into the wet ingredients until just combined.
- Add green food coloring to achieve desired shade and fold in half the sprinkles.
- Spread the dough evenly in the prepared pan and sprinkle with the remaining sprinkles.
- Bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Allow to cool completely in the pan, then lift out and cut into squares.
Notes
For a dairy-free version, use coconut oil instead of butter. For gluten-free, try using almond flour.
