  • Green food coloring or spirulina powder

Instructions

  1. In a large mixing bowl, whisk together flour, baking powder, sugar, and salt until well combined.
  2. In another bowl, whisk together milk, eggs, and melted butter. Slowly stir in desired food coloring or spirulina until achieving the desired green hue.
  3. Pour the wet ingredients into the dry, stirring until just blended. Avoid overmixing; the batter should be thick and slightly lumpy.
  4. Preheat a nonstick skillet over medium heat and lightly grease it.
  5. Pour about ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form and edges look set (about 2-3 minutes). Flip and cook until golden brown (1-2 more minutes).
  6. Serve warm with maple syrup, fresh fruit, or whipped cream.

Notes

Keep pancakes warm in a 200°F oven until the entire batch is cooked. Avoid pressing down on pancakes while cooking to maintain fluffiness.
