- 1 cup granulated sugar
- 2 large eggs
- 1 ½ cups graham crackers, crushed

Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, combine crushed graham crackers with melted butter and a tablespoon of sugar. Press mixture into the bottom of mini cheesecake pan.
- In another bowl, beat cream cheese until smooth. Gradually add sugar and blend until creamy. Mix in eggs one at a time, along with vanilla extract and green food coloring to desired shade.
- Spoon filling into the crust-lined cups, filling them about ¾ full.
- Bake for 20–25 minutes until centers are slightly jiggly.
- Allow to cool to room temperature, then refrigerate for at least 2 hours.
- Top with whipped cream and festive decorations before serving.
