Ingredients

  • 1 cup granulated sugar
  • 2 large eggs
  • 1 ½ cups graham crackers, crushed

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. In a bowl, combine crushed graham crackers with melted butter and a tablespoon of sugar. Press mixture into the bottom of mini cheesecake pan.
  3. In another bowl, beat cream cheese until smooth. Gradually add sugar and blend until creamy. Mix in eggs one at a time, along with vanilla extract and green food coloring to desired shade.
  4. Spoon filling into the crust-lined cups, filling them about ¾ full.
  5. Bake for 20–25 minutes until centers are slightly jiggly.
  6. Allow to cool to room temperature, then refrigerate for at least 2 hours.
  7. Top with whipped cream and festive decorations before serving.
