Ingredients

  • 1 cup granulated sugar
  • 1/2 cup light brown sugar
  • 1 large egg
  • 2 3/4 cups all-purpose flour
  • 1 tsp baking soda
  • 1 tsp peppermint extract
  • 12 tsp green food coloring
  • 1 cup white chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Line cookie sheets with parchment paper.
  3. In a large mixing bowl, cream the butter, granulated sugar, and brown sugar until light and creamy.
  4. Add the egg, mixing until fully blended, then incorporate peppermint extract and green food coloring.
  5. In another bowl, whisk flour and baking soda, then gradually add to the wet mixture until just combined.
  6. Fold in white chocolate chips.
  7. Drop dollops of dough onto the prepared sheets, spacing them 2 inches apart.
  8. Bake for 10-12 minutes until edges are golden.
  9. Cool on the baking sheet for 5 minutes before transferring to a wire rack. Decorate as desired.

Notes

For variations, coconut sugar can replace granulated sugar, and coconut oil or flaxseed meal can be used for vegan options.
