- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup light brown sugar
- 1 large egg
- 2 3/4 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp peppermint extract
- 1–2 tsp green food coloring
- 1 cup white chocolate chips
Instructions
- Preheat the oven to 350°F (175°C).
- Line cookie sheets with parchment paper.
- In a large mixing bowl, cream the butter, granulated sugar, and brown sugar until light and creamy.
- Add the egg, mixing until fully blended, then incorporate peppermint extract and green food coloring.
- In another bowl, whisk flour and baking soda, then gradually add to the wet mixture until just combined.
- Fold in white chocolate chips.
- Drop dollops of dough onto the prepared sheets, spacing them 2 inches apart.
- Bake for 10-12 minutes until edges are golden.
- Cool on the baking sheet for 5 minutes before transferring to a wire rack. Decorate as desired.
Notes
For variations, coconut sugar can replace granulated sugar, and coconut oil or flaxseed meal can be used for vegan options.
