Instructions

  1. Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
  2. In a large bowl, whisk together cake flour, sugar, and baking powder.
  3. In another bowl, beat eggs until pale, then mix in vanilla extract and green food coloring.
  4. Combine wet and dry ingredients gently until just incorporated.
  5. Pour batter into the prepared pan and bake for 12-15 minutes.
  6. Invert the baked cake onto a powdered sugar-dusted tea towel and roll it up to cool.
  7. Beat cream cheese and powdered sugar until smooth, adding lemon juice if desired.
  8. Unroll cooled cake, spread filling, and roll it back up without the towel.
  9. Wrap in plastic wrap and refrigerate for at least an hour before serving.
  10. Dust with powdered sugar and slice into pieces.
