- Green food coloring (a few drops)
- 8 oz cream cheese
- 1 cup powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C) and line a jelly roll pan with parchment paper.
- In a large bowl, whisk together cake flour, sugar, and baking powder.
- In another bowl, beat eggs until pale, then mix in vanilla extract and green food coloring.
- Combine wet and dry ingredients gently until just incorporated.
- Pour batter into the prepared pan and bake for 12-15 minutes.
- Invert the baked cake onto a powdered sugar-dusted tea towel and roll it up to cool.
- Beat cream cheese and powdered sugar until smooth, adding lemon juice if desired.
- Unroll cooled cake, spread filling, and roll it back up without the towel.
- Wrap in plastic wrap and refrigerate for at least an hour before serving.
- Dust with powdered sugar and slice into pieces.
Notes
Allow the cake to cool properly before unrolling to prevent cracking. Avoid overfilling the cake.
