- 1 pound large shrimp, peeled and deveined
- 2 ripe avocados, diced
- 1 cup sweet corn (fresh, canned, or frozen)
- Juice of 2 fresh limes
- 1/4 cup fresh cilantro, chopped
- 1 jalapeño, diced (optional)
- 1/2 red onion, finely diced
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Marinate the shrimp in olive oil, lime juice, salt, pepper, and jalapeños for 30 minutes.
- Preheat the grill to medium-high heat. Skewer the shrimp and grill for 2-3 minutes on each side until pink and opaque.
- While the shrimp grills, mix avocados, corn, red onion, cilantro, and salt in a bowl.
- Remove shrimp from skewers, chop, and fold into the avocado mixture. Adjust lime and seasoning as needed.
- Serve fresh with tortilla chips or over grilled fish.
