Ingredients

- 2 cups pasta (fusilli or rotini)
- 1/2 cup chopped fresh parsley
- 1/2 cup chopped fresh basil
- 1/4 cup chopped chives
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1 cup bell peppers, diced
- 1 avocado, diced
- 1/2 cup yogurt or mayonnaise
- 2 cloves garlic, minced
- 2 tablespoons lemon juice
- 1/4 cup green onions, chopped
- 1/4 cup nuts or seeds (pine nuts or sunflower seeds)
Instructions
- Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
- In a food processor, blend avocado, parsley, basil, garlic, lemon juice, and yogurt/mayonnaise until smooth. Season with salt and pepper.
- Chop your vegetables into bite-sized pieces.
- In a large bowl, combine cooked pasta, chopped veggies, and dressing. Toss until everything is coated.
- Chill in the fridge for at least 30 minutes before serving.
- Serve garnished with nuts or seeds and extra herbs.
Notes
Feel free to tweak the vegetables or dressing to your liking. For a lighter option, substitute Greek yogurt for mayonnaise.
