Ingredients

  • 2 cups pasta (fusilli or rotini)
  • 1/2 cup chopped fresh parsley
  • 1/2 cup chopped fresh basil
  • 1/4 cup chopped chives
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1 cup bell peppers, diced
  • 1 avocado, diced
  • 1/2 cup yogurt or mayonnaise
  • 2 cloves garlic, minced
  • 2 tablespoons lemon juice
  • 1/4 cup green onions, chopped
  • 1/4 cup nuts or seeds (pine nuts or sunflower seeds)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. In a food processor, blend avocado, parsley, basil, garlic, lemon juice, and yogurt/mayonnaise until smooth. Season with salt and pepper.
  3. Chop your vegetables into bite-sized pieces.
  4. In a large bowl, combine cooked pasta, chopped veggies, and dressing. Toss until everything is coated.
  5. Chill in the fridge for at least 30 minutes before serving.
  6. Serve garnished with nuts or seeds and extra herbs.

Notes

Feel free to tweak the vegetables or dressing to your liking. For a lighter option, substitute Greek yogurt for mayonnaise.
