Ingredients

- 1 cup cucumber, diced
- 1/2 cup mayonnaise
- 1/2 cup Greek yogurt
- 2 tablespoons lemon juice
- 2 cloves garlic, minced
- 1 cup protein (grilled chicken, chickpeas, or crumbled feta)
- 1/4 cup toasted pine nuts or sunflower seeds
Instructions
- Cook the pasta: Boil salted water in a large pot, add the pasta and cook until al dente. Drain and rinse under cold water.
- Prepare the dressing: In a bowl, mix mayonnaise, Greek yogurt, lemon juice, minced garlic, and chopped herbs until smooth.
- Chop your veggies: Dice the bell peppers, cherry tomatoes, and cucumber into bite-sized pieces.
- Combine ingredients: In a large bowl, toss the cooled pasta with chopped vegetables and the creamy dressing.
- Chill: Refrigerate for at least 30 minutes to allow flavors to meld.
- Add protein and crunch: Just before serving, mix in your chosen protein and top with toasted nuts or seeds.
