  • Flour or corn tortillas
  • Hatch green chiles
  • Pepper Jack and cheddar cheese
  • Cooked long-grain white or brown rice
  • Ground beef, shredded chicken, or tofu
  • Onion
  • Garlic
  • Fresh cilantro

Instructions

  1. Prepare the Ingredients: Roast hatch chiles until slightly charred, cool, peel, and chop.
  2. Cook the Filling: Sauté chopped onions until translucent in olive oil, add garlic, then protein of choice and cook until done. Stir in cooked rice and hatch chiles and mix in cheese until melted.
  3. Assemble the Burritos: Lay a tortilla flat, scoop filling into the center, sprinkle with cilantro, and fold to secure.
  4. Cook the Burritos: In a non-stick skillet over medium heat, cook burritos seam-side down for 3-4 minutes on each side until golden brown.
