Ingredients

  • 4 boneless chicken breasts or thighs
  • 1 cup Greek yogurt
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, combine Greek yogurt, minced garlic, olive oil, lemon juice, oregano, thyme, salt, and pepper. Mix well until smooth.
  2. Place chicken in a resealable bag or shallow dish and pour the marinade over, ensuring it’s fully coated. Seal and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat grill or skillet to medium-high heat. Remove chicken from the marinade letting the excess drip off. Cook for 7-8 minutes on each side or until the internal temperature reaches 165°F.
  4. Allow chicken to rest for 5 minutes before slicing.
  5. Serve warm over salad greens or alongside roasted vegetables.

Notes

Marinate for longer if possible for enhanced flavor. Avoid overcrowding the cooking surface for even cooking.
