Description

Creamy yet crispy Greek Smashed Potatoes topped with tangy feta cheese and fresh herbs, perfect for any gathering.


Ingredients

  • 2 lbs Yukon Gold potatoes, peeled and quartered
  • 1 cup crumbled feta cheese
  • 1/4 cup high-quality extra virgin olive oil
  • 3 cloves fresh garlic, minced
  • 2 tbsp fresh rosemary or thyme, chopped
  • Juice of 1 lemon
  • Salt and pepper, to taste

Instructions

  1. Boil the potatoes in a large pot of salted water until fork-tender, about 15-20 minutes.
  2. Drain the potatoes and return them to the pot; gently smash them with a potato masher.
  3. Season the smashed potatoes with olive oil, minced garlic, fresh herbs, salt, and pepper. Squeeze in the lemon juice.
  4. Transfer the mixture to a greased baking dish and top with crumbled feta.
  5. Bake at 425°F (220°C) for about 20-25 minutes, until golden brown and crispy.
  6. Finish by sprinkling more fresh herbs on top before serving.
  7. Serve warm and enjoy!

Notes

For a dairy-free version, try nutritional yeast instead of feta. Use Yukon Gold or red potatoes for best results.
