Ingredients

- 2 cups corn kernels (fresh or frozen)
- 1/2 cup honey
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1 cup cream or milk (can substitute with coconut milk or almond milk)
- 1/2 cup sharp cheddar cheese (optional)
- 1 tsp garlic powder
- 1 tsp thyme or parsley (fresh or dried)
- Salt and pepper, to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the corn, honey, melted butter, and eggs. Mix until well combined.
- Fold in the cream or milk gently.
- Add herbs, spices, and cheese if using, and gently fold to maintain fluffiness.
- Transfer the mixture into a greased 9×13-inch baking dish.
- Bake for about 45 minutes to an hour, until the top is golden brown.
- Let it cool for a few minutes before serving.
Notes
Broil the casserole for the last few minutes of baking for a caramelized top. Let cool before slicing to preserve shape.
