- 2 cups gluten-free flour blend
- 1 packet active dry yeast
- 1 cup warm water
- 3 tablespoons olive oil
- 1 teaspoon coarse sea salt
- Fresh herbs (rosemary, oregano, or basil)
- Optional: roasted garlic, sun-dried tomatoes, caramelized onions
Instructions
- Activate the yeast: In a small bowl, combine warm water with the yeast and a pinch of sugar. Let sit for 5-10 minutes until foamy.
- In a large mixing bowl, whisk together the flour blend and salt. Make a well in the center, and pour in the yeast mixture and half of the olive oil.
- Stir until combined. The dough will be sticky and wet.
- Cover with a kitchen towel and let it rise in a warm place for about 60 minutes, or until doubled in size.
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper and lightly coat with olive oil.
- Transfer the dough onto the baking sheet, flatten into shape, and dimple the surface with your fingertips.
- Drizzle with remaining olive oil, and sprinkle with coarse sea salt and herbs.
- Allow the dough to rise for another 20-30 minutes while the oven heats up.
- Bake for 20-25 minutes, until golden brown.
- Let cool slightly, then slice into squares and serve warm with balsamic vinegar and olive oil.
Notes
The dough works best when allowed to rise adequately. Feel free to experiment with toppings and flavors for variety.
