- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons ground ginger
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground cloves
- 1/4 teaspoon salt
- 1/2 cup molasses
- 3/4 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup powdered sugar (for filling)
Instructions
- Cream together the softened butter and sugar until light and fluffy.
- Beat in the egg, molasses, and vanilla extract.
- In another bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
- Gradually add the dry ingredients to the wet mixture, taking care not to over-mix.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Preheat the oven to 350°F (175°C). Roll dough into small balls and place on a lined baking sheet, flattening them slightly.
- Bake for 8-10 minutes until edges are set but centers are slightly underdone.
- While cooling, beat together softened butter, powdered sugar, and vanilla for the filling.
- Once cookies are cool, spread filling on one cookie and press another on top to form a sandwich.
Notes
For a dairy-free option, substitute butter with coconut oil. If you don’t have molasses, honey or maple syrup can be used, although it will change the texture.
