Ingredients

  • 1/2 cup molasses
  • 3/4 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for filling)

Instructions

  1. Cream together the softened butter and sugar until light and fluffy.
  2. Beat in the egg, molasses, and vanilla extract.
  3. In another bowl, whisk together flour, baking soda, ginger, cinnamon, cloves, and salt.
  4. Gradually add the dry ingredients to the wet mixture, taking care not to over-mix.
  5. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  6. Preheat the oven to 350°F (175°C). Roll dough into small balls and place on a lined baking sheet, flattening them slightly.
  7. Bake for 8-10 minutes until edges are set but centers are slightly underdone.
  8. While cooling, beat together softened butter, powdered sugar, and vanilla for the filling.
  9. Once cookies are cool, spread filling on one cookie and press another on top to form a sandwich.

Notes

For a dairy-free option, substitute butter with coconut oil. If you don’t have molasses, honey or maple syrup can be used, although it will change the texture.
