Description
A warm and delightful ginger molasses loaf swirled with cream cheese, perfect for breakfast or as an afternoon snack.

- 2 cups all-purpose flour
- 1 teaspoon ground ginger
- 1 teaspoon cinnamon
- ½ teaspoon nutmeg
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ cup sugar
- ½ cup brown sugar
- ½ cup softened cream cheese
- 2 large eggs
- ½ cup molasses
- 4 ounces softened cream cheese (for swirl)
- ¼ cup sugar (for swirl)
- 1 tablespoon molasses (for swirl)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan and set it aside.
- In a big bowl, whisk together the flour, ground ginger, cinnamon, nutmeg, baking powder, and baking soda. Set aside.
- In another bowl, cream together the sugar, brown sugar, and softened cream cheese until light and fluffy. Add eggs, one at a time, and mix well.
- Stir in the molasses and mix until combined.
- Gradually add the flour mixture to the wet ingredients and mix until just combined.
- In a separate bowl, blend the cream cheese, sugar, and molasses for the swirl until smooth.
- Spoon half of the batter into the prepared pan, add dollops of the cream cheese mixture, then pour the remaining batter on top. Swirl gently with a knife.
- Bake for about 60 minutes, or until a toothpick inserted comes out clean.
- Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely before slicing.
Notes
Use room temperature ingredients for better blending. Be careful not to overmix the batter.
