Description

A warm and delightful ginger molasses loaf swirled with cream cheese, perfect for breakfast or as an afternoon snack.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon ground ginger
  • 1 teaspoon cinnamon
  • ½ teaspoon nutmeg
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ cup sugar
  • ½ cup brown sugar
  • ½ cup softened cream cheese
  • 2 large eggs
  • ½ cup molasses
  • 4 ounces softened cream cheese (for swirl)
  • ¼ cup sugar (for swirl)
  • 1 tablespoon molasses (for swirl)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5 inch loaf pan and set it aside.
  2. In a big bowl, whisk together the flour, ground ginger, cinnamon, nutmeg, baking powder, and baking soda. Set aside.
  3. In another bowl, cream together the sugar, brown sugar, and softened cream cheese until light and fluffy. Add eggs, one at a time, and mix well.
  4. Stir in the molasses and mix until combined.
  5. Gradually add the flour mixture to the wet ingredients and mix until just combined.
  6. In a separate bowl, blend the cream cheese, sugar, and molasses for the swirl until smooth.
  7. Spoon half of the batter into the prepared pan, add dollops of the cream cheese mixture, then pour the remaining batter on top. Swirl gently with a knife.
  8. Bake for about 60 minutes, or until a toothpick inserted comes out clean.
  9. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely before slicing.

Notes

Use room temperature ingredients for better blending. Be careful not to overmix the batter.
