- 2 cups all-purpose flour
- 1 tsp baking soda
- 1 tsp baking powder
- 2 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 cup brown sugar
- 1/2 cup butter, softened
- 2 large eggs
- 1/2 cup molasses
- 1 tsp vanilla extract
- 8 oz cream cheese, softened
- 1/4 cup granulated sugar
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a bowl, mix cream cheese with an egg, vanilla, and sugar until smooth; set aside.
- In another bowl, whisk together flour, baking soda, baking powder, ginger, cinnamon, and nutmeg.
- In a large bowl, beat butter and brown sugar until fluffy, add eggs one by one.
- Gradually mix in dry ingredients and molasses; stir until just combined.
- In the loaf pan, layer half of the ginger batter, then half of the cream cheese mixture. Repeat the layering and swirl with a knife.
- Bake for 50-60 minutes or until a toothpick comes out clean.
- Let cool in the pan for 15 minutes before transferring to a wire rack.

Serve warm with butter or enjoy it plain. Pairs well with coffee or spiced tea.
