  • 1 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp ground ginger
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup brown sugar
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1/2 cup molasses
  • 1 tsp vanilla extract
  • 8 oz cream cheese, softened
  • 1/4 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a bowl, mix cream cheese with an egg, vanilla, and sugar until smooth; set aside.
  3. In another bowl, whisk together flour, baking soda, baking powder, ginger, cinnamon, and nutmeg.
  4. In a large bowl, beat butter and brown sugar until fluffy, add eggs one by one.
  5. Gradually mix in dry ingredients and molasses; stir until just combined.
  6. In the loaf pan, layer half of the ginger batter, then half of the cream cheese mixture. Repeat the layering and swirl with a knife.
  7. Bake for 50-60 minutes or until a toothpick comes out clean.
  8. Let cool in the pan for 15 minutes before transferring to a wire rack.
