- 1 cup all-purpose flour
- 1 tsp baking powder
- 1 tsp baking soda
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- 1/2 cup molasses
- 3 large eggs
- 1/2 cup sugar
- 1 cup heavy cream
- 1/2 cup powdered sugar
- Optional: coconut cream for filling
Instructions
- Preheat your oven to 350°F (175°C) and prepare a jelly roll pan by greasing it and lining it with parchment paper.
- In a bowl, whisk together the flour, baking powder, baking soda, and spices.
- In a separate bowl, beat together the molasses, eggs, and sugar until smooth.
- Gently fold the dry mixture into the wet mixture until just combined.
- Pour the batter onto the prepared pan and spread it evenly. Bake for 12-15 minutes.
- Flip the cake onto a clean dish towel sprinkled with powdered sugar, then roll it up while it’s still warm. Let it cool completely.
- Whip the heavy cream with powdered sugar until stiff peaks form. Unroll your cooled cake, spread the filling, then roll it back up.
- Make the frosting by beating together cream cheese and powdered sugar, then spread it over the top of the cake.
- Chill in the fridge for an hour before serving.
Notes
Ensure to roll the cake while it’s warm to prevent cracking. Store any leftovers in an airtight container in the fridge.
