- 1 cup German sweet chocolate or high-quality semisweet chocolate
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 3 large eggs, beaten
- 1 cup sweetened shredded coconut
- 1 cup toasted pecans, chopped
- 1 pie crust, homemade or store-bought
Instructions
- Preheat your oven to 350°F (175°C).
- Roll out your pie crust and fit it into a pie dish. Prick the bottom with a fork to avoid bubbling. Pre-bake for 10 minutes.
- In a double boiler or microwave, melt the German chocolate and butter together until smooth and let cool slightly.
- In a large bowl, combine granulated sugar, brown sugar, beaten eggs, and cooled chocolate mixture. Mix well.
- Fold in shredded coconut and toasted pecans.
- Pour the mixture into the pre-baked pie crust.
- Bake for 30-35 minutes or until the filling is set and the top is slightly puffed.
- Let the pie cool completely before slicing. Serve with whipped cream if desired.
