Ingredients

- 4 cloves of garlic, minced
- 8 oz of cremini or shiitake mushrooms, chopped
- 1 bell pepper, chopped (any color)
- 1 medium zucchini, chopped
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons fresh rosemary or thyme, chopped
- Salt and pepper, to taste
Instructions
- Wash and chop all your vegetables into uniform sizes.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and cook until fragrant, about 30 seconds.
- Add the chopped mushrooms and cook for 4-5 minutes until softened and golden.
- Incorporate the bell peppers and zucchini, stirring together, and cook for an additional 5-7 minutes until tender yet still crunchy.
- Season with fresh herbs, salt, and pepper to taste.
- Remove from heat and serve immediately, optionally drizzled with more olive oil.
