Description

A comforting and flavorful meatloaf made with ground chicken, garlic, and Parmesan cheese that brings family together.


Ingredients

  • 1 lb ground chicken
  • 1 cup breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 3 cloves garlic, minced
  • 1/4 cup fresh parsley, chopped
  • 1/2 onion, finely chopped
  • 1 large egg
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian herbs
  • Optional: 1 tbsp Worcestershire sauce or Dijon mustard

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté minced garlic and chopped onion in a skillet over medium heat until softened, about 3–4 minutes. Let it cool.
  3. In a large bowl, combine ground chicken, breadcrumbs, Parmesan, sautéed garlic and onion, parsley, egg, salt, pepper, and herbs. Mix until just combined.
  4. Transfer the mixture to a loaf pan or shape it freeform on a baking sheet.
  5. Bake for 45–55 minutes or until the internal temperature reaches 165°F (74°C).
  6. Allow it to rest for a few minutes before slicing.
  7. Serve warm with a sprinkle of fresh parsley.

Notes

Resting the meatloaf before slicing helps retain moisture. This dish pairs well with mashed potatoes or a garden salad.
