A comforting and flavorful meatloaf made with ground chicken, garlic, and Parmesan cheese that brings family together.

- 1 lb ground chicken
- 1 cup breadcrumbs
- 1/2 cup freshly grated Parmesan cheese
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, chopped
- 1/2 onion, finely chopped
- 1 large egg
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp Italian herbs
- Optional: 1 tbsp Worcestershire sauce or Dijon mustard
Instructions
- Preheat your oven to 375°F (190°C).
- Sauté minced garlic and chopped onion in a skillet over medium heat until softened, about 3–4 minutes. Let it cool.
- In a large bowl, combine ground chicken, breadcrumbs, Parmesan, sautéed garlic and onion, parsley, egg, salt, pepper, and herbs. Mix until just combined.
- Transfer the mixture to a loaf pan or shape it freeform on a baking sheet.
- Bake for 45–55 minutes or until the internal temperature reaches 165°F (74°C).
- Allow it to rest for a few minutes before slicing.
- Serve warm with a sprinkle of fresh parsley.
Notes
Resting the meatloaf before slicing helps retain moisture. This dish pairs well with mashed potatoes or a garden salad.
